We pick our gourmet tea when the growth is still young and we get several pickings each season.  Since Jiaogulan is a small vine or ground cover we're able to grow it in green houses using  sustainable agriculture.  We immediately pan dry the leaves to stop the oxidation process.   We roll the leaves in clusters to help preserve the whole leaves during final drying.  The result is a large number of whole leaves and unprecedented freshness.
